Banana Chocolate Chip Bread

Chop for quick cooking and combine in pot:

1 3/4 cups + 2 Tablespoons flour
1 1/2 cups sugar
1/2 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (4oz) finely chopped walnuts ( optional)
1 cup mashed banana (about 2 medium bananas)
2 large eggs, lightly beaten
1/4 cup + 1 tablespoon buttermilk
1/2 cup vegetable oil
1 teaspoon vanilla
1/2 cup chocolate chips (I use a little more and do semi-sweet morsels)

Preheat oven to 350 degrees. Grease and flour 9x5x3 inch loaf pan.

Sift the flour, sugar, baking powder, baking soda, and salt into a large bowl. stir in the walnuts.

In a separate bowl combine bananas, eggs, buttermilk, oil, and vanilla.

Add to flour mixture and stir until just combined. Fold in the chocolate chips. Spoon batter into pan.

Bake for 1 hour and 15-20 minutes or until toothpick comes out clean. Cool in pan 10 minutes then turn out the loaf onto a cooling rack and cool completely.
